On Sunday, January 15th at 6:30pm, Chef Tom will take over one of our private dining rooms to host a special evening before he heads back to San Francisco, where he is currently the Chef de Cuisine at the fine-dining, farm-to-table restaurant One Market.
As a restaurateur and owner of Pago Restaurant Group (and not a chef myself), I have been in a rare position to work with and get to know a lot of talented chefs. Over the past 8 years, I have interviewed, worked with, admired and even become friends with many of the talented chefs in Salt Lake. Last year, I began exploring the idea of hosting some of my favorite chefs inside our restaurants as a guest chef series of “pop up” dinners. This will be the first of several guest chef “pop up” dinners in 2017, where we will feature some of our favorite chefs and chef friends (including some former Pago Restaurant Group chefs). We love to celebrate excellent food and wine, and “pop up” dinners allow both chef and restaurateur to push culinary limits and feature food and wine that truly inspires.
Chef Tom is an extremely talented chef (and a super-nice guy as well) that Utah was proud to call one of its own for a few short years. If you haven’t experienced one of his private events before, now is your chance. His style is updated American, seasonal, simple but elegant. Chef Tom has created a 6-course custom menu for the evening, with optional wine pairings. Food $55, Wine Pairings (optional) $30, plus tax and gratuity. Dinner is limited to 30 guests. Chef Tom Call graduated from the California Culinary Academy and spent time training in Lucca, Italy, before working his way up through many of San Francisco’s finest Michelin-starred restaurants, including Campton Place, Coi, Aqua, One Market and the San Francisco Hotel Monaco. He then moved to Salt Lake City where he was a chef for the Trio Restaurant Group, overseeing Café Trio Downtown, Café Trio in Cottonwood and Fresco Italian Café. During that time Fresco won best Italian restaurant in Utah and best restaurant in Salt Lake City with the help of a talented Chef de Cuisine, Logen Crew. He then moved to the Grand America Hotel (Utah’s only AAA 5-Diamond Hotel) as Restaurant Chef, overseeing all restaurant outlets including Garden Café, Gibson Lounge, in-room dining, high tea, continental breakfast, Lobby Lounge, Grand Spa, and the award-winning Sunday brunch. Tom was also an adjunct instructor at the International Culinary School in Salt Lake City and a cooking instructor for the Gygi Culinary Arts Center. In 2014, Tom launched his own business “Made by Tom” which provides unique dining experiences across the Salt Lake Valley – from catering/ private dining to pop up dinners to private cooking classes. In late 2016, Tom moved back to San Francisco where he is currently Chef de Cuisine at the fine-dining, farm-to-table restaurant One Market.
